Fried Halibut with Parsley and Potato Puree

Cosy Season, Meet Halibut!
Since the weather in Switzerland is getting colder and September is already here, it's fair to say that the cosy season has officially begun. Autumn is my favourite season because I find fashion more interesting, the landscape becomes even more beautiful as the trees change colour, and cosy food is my favourite type of food!
I have lots of autumn recipes that I can’t wait to share with you, but here is something I’ve been craving for a long time and finally made: halibut with parsley and potato purée.
INGREDIENTS
110 small potatoes (peeled)
4 parsley root (peeled, chopped)
A splash of milk
1 tablespoon butter
Salt
Sweet paprika
2 cod fillets (~120 g each)
Universal seasoning
Flour (for coating)
Sauce:
Cooking cream (e.g., Rama)
Juice of ½ lemon
Grated cheese
Dried dill
Universal seasoning
Fries:
2 potatoes (cut into very thin fries)
Oil (for frying)
INSTRUCTIONS
Boil the potatoes and parsley root until soft. Drain and mash with milk and butter. Season with salt and sweet paprika.
Season the cod fillets with universal seasoning, then coat lightly in flour. Fry in oil until golden and cooked through.
In a pan, combine cooking cream, lemon juice, grated cheese, dried dill, and seasoning. Cook gently until slightly thickened.
Cut potatoes into thin fries, rinse, dry, and fry until golden and crispy.
Plate mashed potatoes on the bottom, place fish on top, drizzle with sauce, and serve fries on the side.
