Breakfast idea - Avocado, poached egg toast


Avocado poached egg toast is one of my favourite breakfasts. It's so delicious and keeps me full for a long time. I love adding Philadelphia cheese under the avocado to make it creamier. It is a straightforward recipe, and I'm sure many people know how to make it. Step 1



Cut your avocado in half and remove the seed. Some people don't know how to properly remove the seed without desrtoying the shape, but you can hit it with a sharp knife and just turn it, it will then remove it. Peel the avocado skin off, or scoop the avocado with a spoon straight into a bowl. Smash it, but not fully, so you can still taste a few chanks. Season it with salt, pepper, and chilli if you like, and miy it.


Step 2



Toast your bread in the oven or toaster and spread the Philadelphia.


Step 3




Spread the avocado on the toast.


Step 4



This part is the most important and sometimes tricky. Make sure that you crush the egg into a glass and separate the water from the egg whites before putting it in the water. Boil the water and keep it at a medium heat, salt the water, stir to create a little as I call tornado and put the egg inside. Once you learn how to do this, it makes the process so much easier and faster.


Step 5



Remember, remove the egg once it's not so wobbly (about 2 minutes, don't boil it) and put it for a few seconds on a paper towel. Put the egg on the top of the mashed avocado and season with whatever you like, I used sweet paprika. I like to add some fruits on the side to make the breakfast more balanced. And just like that, it's all done! Enjoy!
